Super Bowl-Worthy Wings

This Super Bowl, regardless of which team you are rooting for (or maybe you are pulling for that elusive double forfeit)—we urge you to pay attention to the quality of the food and beer you serve to your box-betting friends. Montauk Brew Co.’s Vaughan (who interviewed the man who is best at beating Bill Belicheck for the Interview Issue) enlisted the assistance of a friend to help you set your Super Snacks.

While I know a lot about beer, I know little about making wings. Luckily Tyler Hannibal, chef at Indian Wells Tavern in Amagansett, does. We at the Brew Co. suggest pairing the wings with an IPA like Wave Chaser to allow the front end flavor to shine through while letting the hops douse the firey finish.

Here’s Chef Hannibal’s recipe:

BBQ Cilantro Lime Wings

For 4–6 people

INGREDIENTS

2 bottles of your favorite BBQ sauce
1 can of your favorite Montauk beer
1 tablespoon cumin
1 tablespoon paprika
3 tablespoons salt
2 tablespoons pepper
1 bunch of cilantro
3 limes
1 jar of blue cheese dressing
2–3 dozen drumsticks and wings

Preheat oven to 400 degrees.

Toss wings with oil, salt and pepper. On a half sheet tray, spread evenly and roast for 15–20 minutes.

While oven is preheating, combine 2 bottles of BBQ sauce, 1/2 a can of your favorite Montauk beer (the rest is for you!), cumin and paprika in a small pot. Let simmer for 10 minutes while wings roast.

Roughly chop cilantro and cut three limes in half. Once wings are cooked thoroughly, toss in mixing bowl with BBQ mixture, chopped cilantro and squeeze two of limes into mixing bowl.

Serve with a side of blue cheese dressing. Garnish with lime wedges. No charge for extra blue cheese.
